Holy Soup

Long long story…actually is my friend who inspires me the name of the soup after I showed him the pictures. The fellow said that first picture looked like the holy water from ‘guan yin ma’ wor….which didn’t come to my mind when I was taking the pictures. Weird huh? A normal soup can suddenly changed to holy water…. tsk~tsk~tsk



Ingredients
English gourd, honey dew, old cucumber, red dates, wolfberries, dried longans,pork ribs, dried sotong (thinly sliced) and water of course

Methods
Blanch the pork ribs in boiling water and set aside
On another pot boil roughly around 2 liters of water
Put in the pork ribs and the rest of the ingredients except honey dew into the boiling water
Bring to boil first and reduce the heat to simmer for 3 hours
Add in the honey dew and continue to simmer for 1 more hour
Lastly, add in salt to taste

No Name Tea (ii)

I must admit that i'm getting obsess making this type of drink. Maybe i'm too 'windy' liao....until i a bit 'siao siao' recently. Hopefully it can help to reduce my 'siaoness' lar....

Ingredients>dried mandarin orange skin, old ginger, dried persimon,red dates, wolfberries, rock sugar & water

Methods>Put all the ingredients except rock sugar in the boiling water and simmer for 30mins but i simmer for around an hour (a little over liao....) Add in the rock sugar lastly.






Salty salty cha siew paoz awei’s® style

Why it is called salty cha siew paoz? Because salty la….don’t know why… something wrong with my taste bud….. Another thing to beware is the oyster sauce; remember to taste the oyster first before deciding the amount to put on the dishes.







Dough
Ingredients
500g of low protein flour
11g of instant yeast
120g of castor sugar
50g of shortening
2 teaspoon of double action baking powder

Methods
Combine all the dough ingredients and mix well
Knead until smooth and leave it to rise until double of size
Divide into desired size each & flatten it

Filling
Ingredients
2-3 cloves of garlics-chopped
3 onions-chopped
400g of cha siew (cut into cubes)
50g of meat floss
100g of chicken breast meat-cut into cubes & marinade with oyster sauce, pepper, soya sauce, sesame oil & corn flour
Adequate water to moist the filling (approx 3-4 tablespoon of water)
Adequate cooking oil
Cornstarch solutions

Seasonings (can adjust to your preference)
2 tablespoon of oyster sauce (if the oyster sauce is salty reduce the quantity)
1 tablespoon of brown sugar
1 teaspoon of thick soya sauce
1 teaspoon of sesame oil
Salt & pepper to taste

Methods
Saute the garlics & onions until golden brown/fragrant
Add in the marinated chicken and continue to stir-fry
Add in the cha siew & meat floss, mix well with the rest of the ingredients
Add in water adequate water, just enough to moist the filling not too watery
Lastly, add in the seasonings, thicken with cornstarch

Final Process
Wrap in the fillings. Cover with damp cloth until the paoz surface become smooth or doubles in size
Steam over high heat for 10-15mins

No Name Tea

Due to my body which is full of 'wind' (hong sip) especially these few months, i'm advised to take more gingery item to reduce the 'wind' . Then out of sudden i got the idea to make this gingery tea and hopefully it will help prevent me from 'kee tao hong'~~~~



Pretty simple ingredients>Dried longans, red dates, kei chi, ginger slices, rock sugar & water
Methods>Add in the ingredients except rock sugar into the boiling water and simmer for at least 15mins, add in the rock sugar lastly.

In~side (the heart)

After a few series of ‘those’ theme, it’s time to share the recipe-very simple but needs your patience….




Ingredients for the cake
1 egg
30g caster sugar
30g low protein flour
5g cornflour
1 teaspoon ovalette
1 teaspoon water
1 teaspoon vanilla essence
1 tablespoon corn oil
1 teaspoon of baking powder

Methods
Combine all the ingredients together except the corn oil and bat in the mixer till creamy
Add in corn oil and mix well
Pour on a desired greased mould
Bake in a preheated oven at 160-170˚c for 20-25min till golden brown

Ingredients for Red Bean Paste
100g of soaked red ban
500ml of water
2-3 tablespoon of brown/caster sugar

Methods
Boil the red bean for approx. 45-60mins until dry and soft under medium-low heat
Add some water randomly if it dries up too fast
Lastly add in the sugar

Ingredients for red bean pudding
100g of aster sugar
40g hoen kwee/white color green pea flour
2 teaspoon of jelly powder
150ml thick coconut milk
500ml of water
Red bean paste as above

Methods
Combine all the ingredients above and stir non-stop till it come to boil
Let it cool for a while

The 'heart' making process
Slice the cake into 2 layers after it cooled
Place one layer of the cake in the desired mould (a)
Pour the red bean pudding on top of the cake (b)
Leave it to cool for mins
Put a layer of red bean paste (optional)
Repeat the process a & b
Chill in the fridge for 1 hour
The balance of the pudding can pour on a desired mould and chill for at least 1 hour

cny cookies-麦不可思义®

Another very healthy cookies which is very simple to make. The butter can be substitute with margarine for a healthier choice






Ingredients
(A)
200g butter (room temperature)
100g icing sugar (shifted)
1 teaspoon of vanilla essence

(B)
300g whole meal flour

(C)
150g instant oat

(D)
50-100g instant oat-for coating

Methods
Beat (A) until creamy, add in (B) then followed by (C) to form dough
Flatten the dough
Shape with around mould and coat on the instant oat
Bake at 160˚c for 20-25mins on a greased tray

cny cookies-米米喜喜®

Impressed by the name? this is a must try cookies, cause the taste is so yum yum….It’s the combination of creamy, salty, spicy, cheesy, shrimpy etc.





Ingredients
(A)
90g of castor sugar
150g of butter
50 of cream cheese (optional)
1 teaspoon of salt

(B)
½ egg

(C)
50g of grated cheddar cheese

(D)
1 clove of garlic (finely chopped)
1 small onion (finely chopped)
1 teaspoon of chili powder
1 teaspoon of pepper
1 teaspoon of coriander powder
1 teaspoon of ginger powder

(E)
40g of dried shrimps (blend until fine)

(F)
180g of multi purpose flour
1 teaspoon of baking powder
½ tablespoon of milk powder

Methods
Cream (A) till light and add (B) and cream till smooth
Add in (C) followed by (D) and mix well
Add in (E) followed by (F) and mix well Shape the dough into desired ball size and put on a greased tray or non stick paper
Press with a fork or just press deep in the center part of the ball, place a few pieces of dried shrimp on top
Bake at 150˚c for 45-50mins or till brown color, make sure the cookies is completely dry if not it will not be crunchy



cny cookies-一仁千金®

This is one of the cookies which I’ve learnt from baking which I’ve attended recently….surrounded by auntie’s *sweat* It is a very simple and healthy cookies without eggs & butter. Many thanks to ah yan for proposing such meaningful name to the cookies. The initial was 忍一时,海阔天空 but it sounded too ‘leong’ and too long. So I think that 一仁千金 will be perfect




Ingredients
(A)
Icing sugar-90g, Shoretening-170g
(B)
Multi purpose flour-200g
Corn flour-100g
Ground almond-50g
Fine salt-1 teaspoon
Almond flakes-150g (bake on low heat for 10-15mins or until slightly brown)

Methods
Beat (A) until smooth
Add in (B) one portion by one portion and beat until turn to dough
Flatten the dough and shape with a round mould
Bake at 150˚c for 20-30mins on a greased or put a non stick paper on top of the tray
