Merdeka Day Specials: Four Kings

This dish is named after the main four ingredients which are Lady's finger, Four angle bean, Four season bean & Petai



Ingredients> lady's finger, four angle bean, four season bean, petai, chopped chili, chopped garlic, sambal paste, chopped dried prawns & chopped salted fish
Seasonings> 2 teaspoon of light soya sauce, 2 teaspoon of brown sugar, maltosa syrup (optional) & salt taste
Methods> 1) Blanch all the vegetables in boiling water & put aside 2) Saute the garlic, chili, dried prawns & salted fish until really really fragant 3) Add in the sambal paste 4) Add in the vegetables & stir fried together with the rest of the ingredients 5) Add in the seasoning & done

Merdeka Day Specials: Mixed Vege with Marmite Sauce

Here's a simple vegetarian dish

Ingredients: lotus root (sliced into thin pieces), black fungus, green pea bean, 1 capsicun-any color, a bunch of spirals (cook until soft in hot water), 1 chopped chili (optional)
Seasonings: 1 teaspoon of brown sugar, 1 teaspoon of oyster sauce, 1 tablespoon of marmite sauce & salt to taste

Methods: 1) Blanch all the ingredients except chili in boiling water & set aside 2) Saute the garlic till fragant & add in chili 3) Add in all the other ingredients & seasoning, serve

Merdeka Day Specials:Tofu Soup

This is a quick & easy meal to prepare, just within minutes u can enjoy a delicious yet nutricious soup.....



Ingredients>fish balls, home made tofu (refer to made tofu column), chicken stock (or water), ginger, fresh seaweed, salt & pepper to taste
Method>bring the chicken stock to boil & throw in all the ingredients expect salt & pepper, bring it to boil again & add in the seasonings

Merdeka Day Specials: tofU de...light

Well, i've cooked all these dishes on the merdeka day itself, but.......due to some 'perfectionist' problem that's it took so long to be publish.... (been editing/select & deselect the pics) *sweat*



Ingredients, ingredients> Home made tofu (refer to home made tofu column), 2 tablespoon of chopped spring onion, 1 chopped fresh red chili, 2 cloves of chopped garlis, 1 1/2 tablespoon of black fermented bean, 2 tablespoon of dried shrimp, 1 tablespoon of cooking oil, 1 tablespoon of oyster sauce, 2 teaspoon of light soya sauce, 1 teaspoon of brown sugar, 1/2 teaspoon of salt, 150ml water & 1 tablespoon of corn starch

Method

1) Steam the tofu for 5mins 2) Saute the dried shrimps until it turn golden brown & crispy (medium heat), drain it & set aside 3) Saute the chopped garlic in the same oil till golden brown & add in the black fermented bean 4) Add water & bring t boil 5) Add seasoning such as oyster sauce, light soya sauce, brown sugar 6) Thicken the sauce with corn starch 7) Pour the sauce on the tofu & sprinkle dried shrimps, chopped onion & chili on top, gao dim

Home Made Tofu

This is a very simple dish to make, learnt it from a magazine i bought recently and of course i put a little twist on it

Ingredients> 500ml fresh unsweeten soya milk, 3 egg whites, 2 egg yolks, dash of pepper, 1 tablespoon of light soya sauce and 1 teaspoon of salt

Method> Mix all the ingredients and filter it (let it rest for a while before steaming), put a plastic underneath before pouring the mixture over

Steam on low heat for 20mins (do not steam too long)

Mee Goreng

This is cooked by my father for Merdeka Day Lunch, tasted good.... especially after adding lime & vinegar.... slurp...

FUSION SALAD by awei

Since there's leftover from the thai seafood salad, i decided to venture with this recipe since i don't want something too spicy. It might be an odd combination but it tastes great......!

Dressing> 2 teaspoon of light soya sauce, 2 teaspoon of white wine, 1/2 teaspoon of sesame oil,

1 teaspoon of olive oil, dash of pepper, 1 teaspoon of worcestershire sauce, 1 teaspoon of black fermented bean, 1 teaspoon of fish sauce, 1 teaspoon of brown sugar & 1 TABLESPOON of rice vinegar

Ingredients>same with thai seafood salad (refer to thai seafood salad column)+ chopped red chili

put all the dressing into a container (plate or bowl) also can but i used container close the lid & shake the container, let it all 'party' inside

Thai Seafood Salad

Don't know since when i started to fall in love making thai dishes, it's easy to prepare, simple & the most important it suites my taste bud>YUM YUM...
Ingredients> Angel's hair, glass noodles, finely sliced lemon grass (1 stalk), coriander, 2 onions-sliced, fresh seaweed(optional)-a bit, 3 prawns & 1 whole squid (small to medium size)

Methods
  1. cook angel hair & glass noodles until it's soft & done
  2. blanch coriander, prawns & squid in hot water
  3. combine all the ingredients & mix with Thai chili sauce (refer to thai chili sauce page for the recipe)
  4. done, open your mouth & enjoy

Thai Chili Sauce by AWEI

I'M BACK! this round with more 'kick' after spending quite some time venturing with recipes and editing the picsIngredients> A) 2-3 fresh red chilis+ 3-4 chili padi (optional)
2-3 cloves of garlic, 3 onions, 1 inch of old ginger
2-3 stalks of lemongrass
B) lime juice extracted from 4 limes (the big size one)
2 tablespoons of fish sauce, 2 teaspoon of brown sugar
1 tablespoon of light soya sauce & 1/2 tablespoon of rice vinegar
Method>blend all A ingredients coarsely (blend a short while)
& add in B ingredients for seasoning (u can increase or reduce the seasoning according to your taste)
